  1. Optionally add walnuts, chocolate chips, pumpkin or sunflower seeds, etc.

Instructions

  1. Preheat oven to 350°F; place parchment paper at bottom of bread pan and grease

  2. In a large mixing bowl, add in bananas (3 large); mash with a fork until a smooth paste with only small clumps if any

  3. Add in oil (â…“ cup), vanilla extract (2 tsp), maple syrup (2 Tbsp), and mix well with spoon or spatula

  4. Add in flour (1 ¾ cups), sugar (⅓ cup), baking powder (2 tsp), baking soda (1 tsp), salt (⅛ tsp), cinnamon (1 tsp), and mix with spoon or spatula until just barely incorporated; do not overmix (a few lumps is fine)

  5. Pour batter into bread pan and bake for 40-50 minutes; use a toothpick after 40 minutes to check doneness (toothpick should come out clean when bread is done)

  6. Remove bread from oven and allow to cool in the pan on a heat resistant surface for 10 minutes

  7. Remove the bread from the pan and place on a cooling rack for an additional 10 minutes (can just use a cutting board if you do not have a cooling rack)

  8. Slice the bread and enjoy

Can store in an air-tight container at room temperature for 5 days, in the fridge for 7-10 days, or in the freezer for 3 months
